1. Core Principle: Quality Over Quantity

While all five emulsifiers are compatible in theory, we do not recommend combining all five (GMS, LACTEM, PGMS, ACETEM, Tween 80) in a single blend.

Reasoning: They possess different HLB (Hydrophilic-Lipophilic Balance) values. A high concentration can cause viscosity instability, leading to either difficult-to-beat batter (too thick) or oil-water separation (too thin). It also significantly increases costs.

Guideline: We advocate for a "1 Main Emulsifier + 1-2 Co-Emulsifiers/Stabilizers" approach. A blend of 2-3 complementary ingredients is far more effective than a blend of many.

3. Critical Operational Guidelines

Temperature & Addition Sequence:

Oil-soluble additives (GMS, PGMS): Melt thoroughly with the fat/cream base at 60-70°C.

Water-soluble additives (Tween 80): Dissolve in a small amount of warm water first, then slowly pour into the mixture while stirring.

Dosage Control:

The total blend percentage should be controlled between 0.2% - 0.4%.

Warnings: Too much GMS can make the cream stiff and greasy (like lard). Too much Tween 80 can dilute the structure and cause instability.

Compatibility Testing:

Before full-scale production, always conduct a small-scale trial. Refrigerate the mixture for 4 hours and check for layer separation, oil slicks, or sediment. If present, adjust the formula or reduce ingredients.

Summary

All five ingredients can be used together, but we recommend a Simplified blend of 2-3 complementary ingredients. By following the correct temperature sequence, controlling the dosage, and conducting rigorous testing, you can achieve stable, high-quality, and delicious whipped cream.
